Pepper Chicken Roast





Ingredients:

Chicken legs  - 2

sesame oil        - 6-7 tspn
fennel Seed       - 1 tspn
cinnamon         - 1 small stick
cardamom        - 1
cloves              - 2
bay leaves        - 1

Onion             - 1 (chopped)
Tomato           - 1 (chopped)
ginger&garlic paste - 1 tspn
tumeric            - 1/4 tspn
chilly pwd        - 1/4 tspn
coriander pwd  - 1/4 tspn
garam masala pwd -1/4 tspn
salt to taste

freshly ground black pepper - 4-5 tspn

Method :


  1. Clean the chicken legs and remove the skin,add salt ,tumeric and 1 tspn of pepper pwd and pressure cook for 2 whistle.
  2. In a pan heat sesame oil and add whole garam masala , fennel seed & bay leaves.
  3. Add onion & tomato saute till it soft then add ginger&garlic paste.
  4. Add tumeric powder,chilli powder & coriander powder and saute it for another 3-5 mins.
  5. Add salt n mix well , make a thick gravy.
  6. Now add the cooked chicken pieces with the gravy base then add 3 tspn of ground black pepper.
  7. Saute to dry the chicken to your desired level.
  8. Finally add garam masala pwd & kasuri methi over the chicken.

RAva LAddu








Ingredients:


  1. Rava (sooji)        - 1 cup
  2. Sugar                  - 1 cup
  3. Grated Coconut  - 1/2 cup
  4. Ghee                  - 4-5 tspn
  5. Raisins               - 1 tspn
  6. Cashews            - 2 tspn
  7. Cardamom pwd - 1/2 tspn
  8. Milk (boiled&cooled) - 1/2 cup


Method:


  1. Heat a pan on medium low heat & add 2 tspn of ghee,fry the cashews and raisins.
  2. In the same pan add rava and fry for 5 mins continuously.
  3. Then add sugar , grated cocount and cardamom pwd give a fine stir for another 3 mins.
  4. Add 2 tspn of ghee to that mixture and transfer to a plate & let it cool down.
  5. Add 1 tspn of milk in a small portion of rava mixture, Make a ball and set aside in dry place.
  6. Once cooled, store them in an air tight container .


Rava Dosa 




                                                        Chakkarai Pongal





Ingredients

  1. 1 cup Rice
  2. ¼ cup Moong Dal
  3. 2 cups Jaggery (powdered)
  4. ¼ cup Ghee
  5. 15 nos Cashews
  6. 8 nos Raisins
  7. 4 nos Cardamon
  8. 4 cups Water & 1/2 cup Milk
  9. ½ cup Water for melting jaggery


Method :

  1. Dry roast  moong dal under low flame seperately ,should not take more than 4 minutes.
  2. Wash rice, add roasted moong dal  & Add milk and required water with them and cook till done.
  3. Dissolve jaggery with 1/2 cup of water &  melt completely without any lumps.
  4. Add thoroughly cooked rice and dal mixture to the jaggery syrup and mix well.
  5. Fry raisins and cashewnuts in ghee.
  6. Add cashewnuts,raisins,Crushed cardamom into it and stir it well.
  7. Cook everything on medium flame until it thickens and becomes sticky.
  8. Serve it hot.

                Crispy Rava Dosa



                Ingredients

                1. 1 cup rava(sooji)
                2. 1 cup rice flour
                3. 1/2 cup maida
                4. 1 tablespoon besan flour
                5. salt as per taste
                6. 4 chopped green chilli 
                7. 1 tablespoon cumin seeds
                8. 1 tablespoon curd
                9. fresh coriander leaves 
                10. cashews nut 
                11. fresh grated ginger

                1. Take all the ingredients in a bowl and mix water & Curd.The batter should be very thin of  buttermilk consistency.
                2. Heat a pan and It should be really hot. Drizzle some oil and pour the watery batter.
                3. Let it cook in medium flame until the dosa browns to a golden colour & Serve hot with sambar :)

                Healthy and Tasty Sprouts

                Excellent Mixed Sprouts with lot of fiber and protein.




                Ingredients:


                • Mixed sprouts      -  1 cup (fenugreek , horsegram & green lentils whole)
                • Oil                      -  2 tbsp
                • Mustard&cumin  -  1 tbsp 
                • onion                  -  Half (chopped)
                • ginger&garlic      -  chopped 1 tbsp
                • green chilli          -  1 tbsp chopped
                • tumeric               - 1/4 tbsp
                • chilli powder       - 1 tbsp
                • garam masala      -1 tbsp
                • grated cocount    - 1 tbsp 
                • salt to taste
                Method :

                1. Boil the mixed sprouts with half a cup of water, pinch of salt & turmeric powder for about 3-5 mins.
                2. Take a fry pan, Add oil and heat,saute with mustard and cumin seeds & allow to splutter.
                3. Add chopped onion & fry further for 3 mins.   
                4. Saute ginger,garlic & green chilli  for 2 mins,combine well.
                5. Then add chilli pwd and garam masala pwd , Keep the flame low and allow to cook for 2 mins.
                6. Finally add the cooked sprouts.switch off the stove & add grated cocount.
                7. Garnishing with fresh coriander leaves and serve hot.
